Wonderful car except one thing that is driving me nuts. The dash and infotainment screen goes dark at the first hint of a shadow. Even with the brightness turned all the way up, its very difficult to see the infotainment screen. Is there any possible way to turn off this feature so that its always bright?

Unfortunately no..the dash brightness controls only the instrument back lights..not the nav screen....

There should be a little delay time between switching...if it switches back and forth too quickly, there maybe an issue with the sensor on the center dash near the windshield. looks like a bubble...Make sure it is clean of any dust or film..

Here is an update on 2/17/17. I have a dash cover. The hole that fits over the sensor is not large enough to allow light to reach it. At least that was my theory. So, I took off the cover and made the hole bigger. Now, there is a distance around the sensor of about 1/2 inch. That lets enough light hit the sensor and the problem was solved.
Great news
